Spicy Capsicum and potato Recipe (shimla mirch aur aloo ki sabzi)

Spicy Capsicum and potato (shimla mirch aur aloo ki sabzi) is a spicy vegetable dish. All the hard work is required in chopping all the vegetable, otherwise whole dish comes together very quickly. The taste of potatoes in this dish is so incredible that is the only reason for making it again and again.

Ingredients for Spicy Capsicum and potato:

1 medium size onion, chopped

2 small size fresh tomatoes, chopped

3 medium sized potatoes cut it into 1 inch cubes

1 medium sized capsicum, chopped about 1 inch in length and 1 cm thick

½ cup of vegetable oil

1 tbsp of red chili powder

½ tsp of turmeric powder

½ tbsp of salt

3/4 cup of water

Procedure:

1) In a heavy bottom pan, add vegetable oil and heat oil on medium heat. Add onion and a pinch of salt, mix it and cook onion until they get golden in color. At this point add a splash of water, stir it. Then add salt, turmeric powder and red chili powder. Mix it well.

2) Add fresh chopped tomatoes, mix them well. Add 1/4th cup of water, close the lid and let them fully cooked for about 2 minutes.

3) Smash the tomatoes with the help of back of your spoon. Keep doing that until all the water evaporates and tomatoes are fully cooked.

4) At this point add potatoes and stir them well. Keep stirring for about 5 minutes. Then add remaining water and let the mixture comes to a boil close the lid and let potatoes to cook.(Amount of water and cooking time really depends on the size of your potatoes, in this cube size it will take about 5 to 10 minutes but keep an eye on them)

5) When there is only little bit water left behind and potatoes are nearly cooked, add chopped capsicum and mix them well. Cook them on medium heat for about 2 to 5 minutes or until they fully cooked and you are done. Serve hot and enjoy.
