Shimla mirch aur anday (capsicum or bell pepper and eggs)

Capsicum, bell pepper or Shimla mirch is a green vegetable. Shimla mirch aur anday a.k.a capsicum and eggs is great dish either for breakfast, lunch or may be in dinner. Shimla mirch aur anday is a quick and easy healthy dish. It contains proteins in the form of eggs and also vegetable in the form of capsicum. By the way you can also add any veggies you like the most and enjoy this dish.

Ingredients

2 large or 3 medium size capsicum or bell pepper
2 medium size onions, chopped
2 medium size tomatoes, chopped
6 eggs
½ tsp of whole cumin seeds
¾ tbsp salt
1 ½ tbsp of red chili powder
½ tsp of turmeric powder
½ cup oil

Procedure

1) Take your capsicums and chop it into small pieces.

2) In a heavy bottom pan add vegetable oil and preheat it on medium heat. Add chopped onions in it and cook them until they get lightly golden in color around the edges.

3) Add cumin seeds and fry them for 1 minute. Add chopped capsicums and stir for about 3 to 4 minutes. Add salt, red chili powder and turmeric powder. Stir it for 1 to 2 minutes.

4) Add chopped tomatoes and water. Stir and close the lid. Let tomatoes to fully cook. Keep an eye on them. After they softened try to break down a bit with the back of your spoon and stir it well.

5) As tomatoes fully cooked the mixture will start separating from oil. Add eggs, add 2 to 3 eggs at a time and mix well. At this stage keep your stove flame as low as possible.

6) Once you add all eggs, cook them on medium flame for 1 minute and then turn off the flame. Now you are ready to serve. Add chopped fresh coriander in it and serve warm.
