Qeema karela (Bitter-gourd and ground beef)

Bitter-gourd and ground beef is a traditional dish. Bitter-gourd is very bitter in taste if you eat it raw. When you fry it, Bitter-gourd release bitterness in the oil and get crispy. Cooking ground beef in spices makes it to the next level. So basically in this dish you have to fry sliced bitter-gourd, cook ground beef in spices and combine together. A combination of vegetable and meat.

Ingredients

1/2 kg Bitter-gourd, thinly sliced
1/2 cup cooking oil
5-6 cloves
1 black cardamom
1 bay leaf
1 star anise
2-3 medium sliced onions, thinly sliced
8-10 cloves of garlic
2 inch piece of ginger
2 green chilies
2 tsp crushed coriander seeds
2-3 tomatoes, chopped
3/4 tsp salt
1& 1/2 tsp red chili powder
1/2 tsp turmeric powder
1/2 cup yogurt
3/4 tsp dried fenugreek leaves
1 whole green chili

Procedure

1. Peel, de-seed and slice bitter-gourd. Sprinkle some salt on sliced Bitter-gourd. Set aside for 1 hour.

2. After 1 hour, In a pan add cooking oil and preheat oil. Add sliced bitter-gourd in hot oil and fry until get golden in color. When they turn golden brown in color, take them out and set aside.

3. In the same oil add cloves, black cardamom, bay leaf, star anise and thinly sliced onions. Fry onions till turn golden brown in color and crispy around edges.

4. Peel off ginger and garlic. Wash ginger, garlic, and green chilies. Add them into mortar and pestle. Add crushed coriander seeds. Ground it and make a fine paste.

5. Add that paste to fried onions. Cook for 3-4 minutes. Once garlic is cooked completely, add ground beef and stir it well.

6. On medium heat cover the lid and let it cook for 8-10 minutes. When there is still a little liquid left behind, add chopped tomatoes. Mix well and cover the lid. Cook tomatoes for about 5 more minutes.

7. Add salt, red chili powder and turmeric powder. Mix well. Keep on stirring until all the liquid dries out and oil start separating from cooked ground beef.

8. In a mug, add yogurt and whisk well using a fork. Add whisked yogurt in the pot and stir it well. Mix well. Keep flame on low to medium while adding yogurt. Mix well until yogurt is fully incorporated.

9. Once yogurt is fully incorporated, and oil start separating. Add dried fenugreek leaves and stir it well. Add fried bitter-gourd and stir it well. Make a slit in a whole green chili. Add it to the dish, stir it and close the lid. Turn off the flame and ready to serve.
