Peri Peri Crispy Burger and Fries

Crispy burger is the most wanted and addicted burger. Making homemade burger is fun and adventure at the same time. You can feel free to add what you want in it. You can use your favorite type of sauce in it. Peri peri Crispy burger is a burger which includes a chicken fillet marinated in peri peri sauce overnight, coated with crispy flour coating. Fries are must to have on side with burger.

Ingredients

1st marinade
1 whole chicken breast, thinly sliced into 4 pieces
2 cups water
1/2 tsp salt
2 tsp vinegar
2nd marinade;
4 tbsp peri peri sauce

Coating

3/4 cup all purpose flour
1/4 cup rice flour
1/4 cup corn flour
1 tsp salt
1 tsp black pepper powder
1 tsp roasted cumin seed powder
1/2 tsp oregano
1 tsp thyme
1/2 tsp red chilli powder

French fries

1 kg potatoes, peeled and cut
6 tbsp all purpose flour
2 tbsp corn flour
2 tbsp rice flour
1/2 tsp salt

Sauce
3 tbsp mayonnaise
1 tbsp peri peri sauce

Assembling
Caramelized onions
Cheese slices
Lettuce leaves

Procedure

1. Take a whole chicken breast, cut it into half and then thinly slice each half into two equal strips. Now you will get 4 thinly sliced pieces of chicken breast.
2. Pound each one of them with a meat mallet. In a bowl add water, vinegar and salt. Mix well. Add slices into that mixture, marinade chicken for 2 hours.
3. After 2 hours, take a bowl. To that add peri peri sauce. Stir it well and cover it. Marinate chicken overnight in the fridge.
4. Next day take out marinated chicken 2 hours before you start making burgers. Leave chicken on the counter let it come to room temperature.
5. Start peeling the potatoes and cut them length wise. Wash them 3-4 times to remove all the starch. Drain water and set aside.
6. In a bowl add all purpose flour, corn flour, rice flour and salt. Stir these flour well. Add chips into flour mixture and coat them well. Start frying them in batches.
7. In a bowl add all purpose flour, rice flour, corn flour, salt, black pepper powder, dried thyme, dried oregano, cumin powder and red chilli powder. Mix well.
8. Coat each piece with flour mixture and coat evenly. Add that into water, darin excess liquid and coat again in dry flour mixture. Rub the flour mixture on each piece, coat well. Try to make crumbs on each piece, remove excess flour.
9. Preheat oil on medium heat. Add chicken piece in the hot oil. Fry 3-4 minutes on each side. Drain excess oil and take out chicken pieces.
10. Repeat the same process for each one of the pieces. Take each piece, place a slice of cheese on the top. Cover it with a lid let the cheese slices to melt completely.
11. With the last batch of french fries start assembling your burger. Toast burger buns on a dry skillet with some butter.
12. Make quick sauce using mayonnaise and peri peri sauce. Apply 1 tsp of sauce on each side of sliced bun.
13. Place that chicken piece on lower side of the bun. Put some caramelized onions and green lettuce on the top. Cover the lid and serve while burger is still hot and enjoy.
