Pakoray (Potato-onion Fritters)

pakorayIngredients:

1 ½ cup of Besan (Gram flour)

1 tsp of salt

2 tsp of chili flacks

2 tsp of chili powder

2 tsp of coriander powder

1 tsp of cumin seeds

½ tsp of ajwain (Carom Seeds)

½ tsp of black pepper (crushed)

3 medium size potatoes

2 small Onion

3 to 4 green chili

¼ cup of Fresh spinach

¾cup of water

Vegetable oil for frying

PROCEDURE:

In a bowl add gram flour,salt,chili flacks,chili powder,cumin seeds, ajwain (Carom Seeds) and black pepper r in it. Add water and mix it well with the help of large spoon.It should have thick paste like consistency.Now peel the potatoes and onions.Rinse them well.Cut potatoes in half, each half into half and thinly slice all of them.Take onions,from top cut them into half and length-wise thinly slice each half of onions.Take spinach and green chili,chopped them nicely.

Add potatoes,onions,spinach and green chili to the gram flour mixture and mix all the ingredients well.Leave the mixture for about 15 minutes and then start frying.For frying take a deep pan and fill it about ¾ of it with vegetable oil.Heat the oil on medium heat.Take a tablespoon,fill it with mixture and drop it into hot oil.Add about 8 to 10 medium size pakoray at a time,but don’t overcrowd the pan otherwise temperature of oil drops and they won’t cook evenly.Fry them for about 5 to 7 minutes or until they become golden and crispy from each side.Repeat same process and make all the pakoray from the mixture.Serve them hot with mint chutney or ketchup and enjoy.
