One pot peri peri chicken pasta

Peri peri sauce is a chilli sauce and goes very well with the chicken. Peri peri chicken pasta is a dish in which only using one pot you can make a delicious pasta dish. You don’t need an extra pot to boil pasta separately. Cheese is optional but why not. Best part about one pot pasta is that sauce soak up really well in the pasta. Ingredients

1 chicken breast (cut it into cubes)
6 tbsp Nando’s Peri peri sauce (mild)
1 medium sized onion, chopped
3 -4 cloves of garlic, chopped
1 capsicum, chopped
1 tomato, chopped
2 tbsp olive oil
1/2 tsp crushed black pepper
1/2 tsp mixed herbs
1 tsp crushed red chilli flakes
4 tsp pasta sauce, (optional)
3 cups water
3/4 tsp salt
2 cups penne pasta
2 tbsp Nando’s Peri peri sauce
6-8 basil leaves
1 cup cheddar cheese, grated

Procedure

1. Cut chicken breast into small cubes. Add pieces in a bowl. Add 6 tbsp of Nando’s Peri peri sauce in the chicken. Marinate chicken for 30 minutes. Set aside.

2. Chop up onion, garlic, tomato and capsicum. In a non-stick pan, on medium heat add olive oil and add marinated chicken pieces to the oil.

3. Fry all the pieces on medium heat, cook for about 5 to 8 minutes. Add onion and mix well. Cook for about 3-4 minutes. Add chopped garlic, cook for 2 minutes.

4. Add chopped capsicum and fry for 3 minutes. Add crushed black pepper, Italian mixed herbs and crushed red chilli flakes. Mix well.

5. Add chopped tomato, pasta sauce and mix well. Add just a splash of water, mix well cook for 3 to 4 minutes.

6. Add remaining water, mix well. Add salt and mix well. Let the mixture comes to a boil. Cover the lid.

7. Once a boil comes, add pasta and mix. Cover the lid. Let the pasta cook for 10 minutes on medium heat.

8. After 10 minutes, check your pasta. When it is fully done. Add 2 tbsp of Peri peri sauce. Add 6 chopped basil leaves. Mix well. Add grated cheddar cheese and cover the lid.

9. When cheese fully melted garnish this dish with some roughly chopped basil leaves and serve.
