No churn mango ice cream with mango chunks

No churn mango ice cream is a ice cream made with out using any ice cream machine. You just need an electric beater to whip up cream. Basically you need to create air in the cream mixture which can then make soft and fluffy icecream. But be careful not to overmix the cream. Mangoes are in season so why not to give this a try.

Ingredients

4-5 large size mangoes, cut into cubes
500 ml heavy cream
200 ml condensed milk
Yellow food colour, optional

Procedure

1. Take mangoes wash well and peel them off. Cut them into cubes. Save half cup for later use. Take about 3 cups mango chunks and make puree out of it. Blend well.
2. In a big bowl add cream and beat well until soft peaks are formed but don’t overmix it otherwise cream will turn into butter and then there is no going back.
3. Add condensed milk again beat well. Add mango puree (Leave 1/2 cup puree behind to garnish) and beat well. Scrape the aides of the bowl and mix with the help of spatula. If you want to add food colour, add at this stage and stir well.
4. Add mango chunks in the mango and cream mixture and stir it well. With the help of spoon pour some puree in the ice cream mixture and gently stir it.
5. Add big spoon full of mango puree couple of inches apart. Make design using a spoon back and forth. Cover it with some plastic wrap and refrigerate it overnight and serve the other day. Enjoy.
