Makhandi halwa

Makhandi halwa is a traditional sweet dish. Makhandi halwa is a type of soji ka halwa, based on soji and milk. A lot of effort is done while mixing it but when you eat it you will forget the pain of your effort. But it is a must have meetha in your recipe list just in case you need it.

ingredients

1 and 1/2 cup of soji (semolina)
1and 1/2 cup of sugar
1and 1/2 cup of desi ghee (clarified butter)
3 cups of milk
3-4 green cardamoms
12 – 14 almonds, chopped
1/4 cup coconut
1/2 cup raisins

Procedure

1. In a bowl add soji and milk, mix well and let it rest for about 45 minutes.
2. In a pan on medium heat add desi ghee, and green cardamoms let the ghee melts. Add sugar in it, mix well and let the sugar to turn brown i colour.
3. As soon as it turns brown, add milk and soji mixture and stir vigorously. You need to stir continuously otherwise soji will stick to the bottom of the pan.
4. Cook for about 10 to 15 minutes or until it turns golden brown in colour and halwa started separate from desi ghee.
5. Add chopped almonds, coconut and raisins mix well And serve hot on a rainy day.
