Gajar ka halwa

Gajar ka halwa aka Carrot Halwa is the most famous and traditional homemade halwa. During winter season carrots are in season and easily available that is why Carrot halwa is a must try recipe.

Ingredients

1& 1/2 kg carrots, grated
2 kg milk
8 to 10 green cardamoms
1/8 piece of nutmeg
1 & 1/2 cup sugar
1 tbsp desi ghee
1/2 cup chopped almonds
1/2 cup chopped pistachios
1/2 cup raisins
1/4 cup grated coconut
1 cup cream

Procedure

1. Peel off all the carrots, wash them well and shred all carrots. Set aside.In a big pot add all the grated carrots. (Make sure after adding all the carrots there is enough space to fit in the milk).
2. On medium heat, let the carrots to cook a bit and dries out its moisture. Start pouring the milk. Mix well.Now you just need to stir occasionally and cover the lid. Cook untill liquid dries out to half of the current volume.
3. Make sure it won’t stuck to the bottom. Keep stirring. Take green cardamoms, peel them and coarsely ground them. Mix well.Take a small piece of nutmeg and ground it well. Add it in the pot. Mix well.
4. When it reduced to half, stir it continuously. It will take about 1 hour on medium heat. Make sure to remove the excess from each side.Add sugar and mix well. Dry all the liquid. Once all the liquid dries out completely add 1 tbsp desi ghee. Mix well.
5. Add almonds, pistachios, raisins, and coconut. Mix well. Now let the liquid to dries out completely. It will take about 30 to 45 minutes. Add cream and mix well until cream incorporate in the halwa well. Ghee should be separate out from the halwa. Halwa is done, serve and enjoy.
