Aloo phaliyan, green beans and potatoes

Green beans are fresh, immature part of beans plant. There are various ways to cook these beans. Aloo phaliyan is a traditional way of cooking green beans. Aloo phaliyan taste really well with soft roti or paratha. Best part of Aloo phaliyan is crispy green beans and soft potatoes.

Ingredients

1/2 kg green beans, chopped
5-6 medium sized potatoes, cut into cubes
2 medium sized onion, chopped
1 inch ginger piece
6-7 cloves of garlic
1 medium size tomato, chopped
2 tsp crushed coriander seeds
1-2 green chillies, chopped
2 inch ginger piece, sliced
2 green chillies, chopped
1/2 cup cooking oil
1 tsp cumin seeds
1 glass water
3/4 tsp salt
1 and 1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 tsp qasuri meethi

Procedure

1. Peel and chop all the beans, potatoes, onions, ginger, garlic, green chillies and tomatoes.
2. Add oil in a pan and heat it up on medium heat. Add cumin seeds and fry. Add chopped onions and cook on medium heat till get some golden colour.
3. Grind ginger, garlic, green chillies and crushed coriander seeds and make a paste.Add that paste in cooked onions and cook for 3-4 minutes. Add a splash of water.
4. Add salt, red chilli powder and turmeric powder. Mix well.
5. Add chopped tomatoes and mix well. Add 1/4 cup water, mix well and cover the lid.
6. Once tomatoes get softened, add potatoes. Cover the lid and let the potatoes to fully cook. Cook for 10 minutes. Check potatoes are 3/4 done add green beans. Mix well.
7. Cover the lid cook for 5-8 minutes. If you need add just a splash of water. Cover the lid and cook on medium heat.
8. Add qasuri meethi and mix well. Add sliced ginger and chopped chillies and serve.
