White Sauce Pasta

White sauce pasta is very easy to make and its flavors are quite different from regular red tomato based sauce. In this dish chicken got some strong flavor of garlic and ginger by marinating it but you can skip the step if you want. It is just also known as béchamel sauce. It is sauce based on butter, flour and milk.

Ingredients

For Chicken

Chicken breast, one medium size boneless, Skinless

Garlic, 1 clove

Ginger, ½ inch piece

Pinch of Salt

Black pepper powder, ¼ tsp

Vegetable oil, 3 Tbsp

For the sauce

Oil, 2 Tbsp

Frozen peas, ½ cup (soaked them in warm water for about 10 minutes)

Red chili flakes, ¼ tsp

Water

Salt ¼ tsp

Unsalted butter at room temperature, 2 Tbsp

All purpose Flour, 2 Tbsp

Milk, 1 and ½ cup

Cream, ½ cup (optional)

Cheddar Cheese, ½ cup (optional)

Dried oregano powder, ¼ tsp

Black pepper powder, ½ tsp

Salt, ½ tsp

For Penne Pasta

Penne Pasta, 1 ½ cup

Salt, ½ Tbsp

Oil, 2 tsp

Water

Procedure

1. In a bowl take one boneless chicken breast (cut it into cubes) and set that aside. In mortar and pestle ground ginger and garlic. Add that ginger and garlic paste to chicken, also add ¼th tsp of salt and ¼ tsp of black pepper. Mix well and let it rest for 15 to 30 minutes.

2. In a pan add 2 tbsp of oil, add soaked peas let them cook for about 2 minutes. Add 1/4th tsp of crushed red chili flacks. Cook for about 1 minute more then take them out and set that aside.

3. In the same pan add 3 tbsp of oil, to that add marinated chicken. Cook until chicken is fully cooked. Take it out and set that aside.

4. In the same pan add 2 tbsp of butter on medium heat melt the butter, when butter melts add 2 tbsp of flour. Mix well for 1 minute and gradually add 1 and ½ cup of milk, 1/2 cup of cream, and ½ cup of cheese. Mix continuously until the sauce thickens and get smooth. Mix well and add 1/4th tsp of dried oregano powder, ½ tsp of black pepper, and ½ tsp of salt. Mix well and sauce is ready. (you can do step 4 and 5 at that same time)

5. In a big pot filled with boiling water, add ½ tbsp of salt, 2 tsp of oil and 1 and 1/2 cup of penne pasta. Cook pasta until fully done about 8 to 10 minutes. Drain water, run under cold water over cooked pasta. Lightly shake it and set that aside.

6. Add chicken, peas to the sauce, mix well. Lastly add pasta to the sauce and serve hot.
