Shakshouka in indian style is a variation of a maghrebi dish. Traditionally consists of poached eggs in rich tomato sauce. Apart from eggs, olive oil, peppers, onions and garlic. Spices included in this recipe are cumin seeds, paprika powder and cayenne pepper. In indian style sauce consists of little bit different ingredients. Shakshouka consists of poached eggs in a thick traditional tomato sauce filled with indian spices.
Ingredients
2 tbsp cooking oil
1 onion, chopped
4 cloves of garlic
1 inch piece of ginger
2 green chillies
1 tsp crushed coriander seeds
2 medium sized tomatoes, chopped
3/4 tbsp salt
1&1/2 tbsp red chilli powder
1/2 tsp turmeric powder
6 eggs
Salt
Crushed black pepper
Red chilli powder
Dried parsley
Green chilli
Procedure
1. In a pan, add cooking oil and preheat it on medium heat. In hot oil add chopped onion and stir it. Cook onions on medium heat until become translucent, in about 5 minutes.
2. In a grinder add ginger, garlic, green chillies and crushed coriander seeds. Make a smooth paste.
3. Add that paste in onions and stir it well. Cook for about 3 minutes or until you will no longer smell raw garlic flavor. Add chopped tomatoes and mix well.
4. Add some water and let the tomatoes to get soft. Add salt, red chilli powder and turmeric powder. Cover the lid and let it cook on medium heat. Open the lid, let the liquid dries out completely.
5. At low heat, start adding eggs. Make a hole in the sauce and add an egg in it. After adding eggs, sprinkle some salt, black pepper, red chilli powder, dried parsley and green chilli.
6. On low heat, cook eggs until yolks turn light pink. When you serve this dish yolks should be runny. Serve immediately and enjoy.
