Rasmalai recipe – How to make best soft Rasmalai

Rasmalai

Makes 12 small size ball

INGREDIENTS:

1 cup of Milk powder
½ cup of granulated sugar
½ tsp of all purpose flour
½ tsp of baking powder
1 tbsp of melted ghee(it is crucial to have a completely melted ghee)
1 egg
1 tsp of cardamom powder(2 to 3 medium size grounded cardamoms)
6 to 7 chopped almonds
4 cup full cream milk

Procedure:

Take a medium size bowl, add milk powder, all purpose flour, baking powder and ¼ th tsp of cardamom powder. Gently mix them(It is necessary). Now add melted ghee in it and mix the whole mixture. Now take a small bowl, Break an egg and beat it slowly. Now add this beated egg in the bowl with other ingredients and start kneading. Knead it until it gets smooth dough and it should be shinny from outside. Set that aside for a while.

Take a big pan, add milk and heat it on the stove. Add remaining cardamom powder in the milk. When milk gets warm,add sugar in it and keep stirring until milk gets boiled. Once milk gets boiled, turn off the heat and start making balls from dough.

Take milk dough and make small round balls(make sure that there are no cracks on them also make small sized balls as they will double in size when they fully cooked).

Now put the milk again on heat. when it comes to a boiling point, start adding all the balls one by one and cook them on high heat for about 5 to 6 minutes. At this stage you can turn the rasmalai in order to cook them evenly. After 6 minutes turn the heat to low and sprinkle all the chopped almonds over rasmalai and cook them for about 10 to 12 minutes.(In this stage don’t turn the rasmalai or touch them with spoon but you can swirl the pan once and don’t cover the pan).After 12 minutes the rasmalai should be doubled in size.Now turn the heat OFF and remove the pan from stove.Let it cool completely.Now serve with the big smile.
