No churn vanilla milk popsicle

Vanilla milk Popsicle also known as malai kulfi is a frozen dessert. Vanilla milk Popsicle is a street style ice cream. Traditional ice cream recipe with a taste of vanilla. Full cream milk is reduced to a thick consistency on a stove top. Add some nuts and vanilla flavor to it and freeze it overnight. Ready to serve next day.

Ingredients

2 kg full fat milk
6-8 green cardamoms
1& 1/2 cup sugar
1 & 1/2 cup milk powder
2-3 slices of rusk (dried bread)
1/4 cup ground almonds
1/4 cup ground pistachios
1 tsp vanilla essence

Procedure

1. In a big pot, add milk and bring it upto a boil. Let it boil. Keep flame on medium heat. Boil milk on constant heat. Reduce milk on medium heat. Keep on stirring. Let milk to boil on medium heat.

2. Peel off green cardamoms and take out all the seeds. Ground them in a mortar and pestle. Make a fine powder. Add that into boiling milk. Cook for 5 minutes.

3. Add sugar in the boiling milk. Keep boiling for 30 minutes. Keep the sides clean of the pan. Using spatula remove the excess from the sides of the pan.

4. Gradually start adding milk powder and stir it well. Using a whisk let the powder milk to dissolve completely to the milk mixture. Let it cook for 20 minutes. Whisk well until milk reduces a bit and thickened.

5. Tear rusk into pieces and add it into milk. Let the pieces of rusk to soak the liquid. Cook on medium heat for 15 minutes. Using a whisk, break down the large chunks of rusk in smaller pieces.

6. When no more large chunks left behind, add ground almonds and pistachios. Let the mixture boil for 5 -8 minutes. Add vanilla essence and stir it well. Keep on stirring for 5 minutes. Turn off the flame and set aside to cool completely.

7. Let the mixture to cool down on room temperature. Add this mixture to the ice cream molds. Keep these in the freezer overnight and serve next day.
