Fried Arvi Masaala Recipe

Arvi is a root vegetable. It also known as taro root. Arvi is available in local markets during summer season. It looks like ginger but smaller in size, and little bit darker in colour. First we have to peel off the arvi, and than cut them in 1 inch pieces. Arvi is slightly slimy and white in colour from inside. Fried arvi masala is a very tasty dish and comes together quickly.

Ingredients

1 kg arvi (taro root), peeled and cut them into 1 inch piece
1/2 cup vegetable oil
1 tsp of cumin seeds
1 medium sized onion, chopped
6 cloves of garlic
1 inch piece of ginger
3 green chillies
2 tsp of whole coriander seeds
3/4 tsp of salt
1 and 1/2 tsp of red chilli powder
1/4 tsp of turmeric powder
2 medium sized tomatoes, chopped
1/4 cup water
1/2 tsp of garam masala
1/2 tsp of qasuri meethi

Procedure

1. Take pieces of arvi, sprinkle some salt. Mix well and set aside for 30 minutes. After 30 minutes wash them and set aside.
2. In a non-stick pan add vegetable oil and heat it over medium heat. Once oil heat up add cumin seeds and fry them. Now add arvi and fry until tender.
3. Remove all the pieces of arvi in a plate, in the same oil add onion and let them cook until turn golden in colour.
4. In a grinder, grind ginger, garlic, green chillies and coriander seeds and make a paste.
5. Once onions turns golden in colour add paste to onions and let it cook for about 5 minutes or until fully cooked. Add salt, red chilli powder and turmeric powder. Mix well.
6. Add chopped tomatoes, water and mix. Cover with the lid. Let it comes to a boil. Let it simmer for about 5 to 8 minutes.
7. Open the lid, let the liquid to evaporate. Add fried pieces of arvi. Mix well and cover it. Let it cook for 2 minutes.
8. Add garam masala and qasuri meethi. Mix well. And serve with warm roti
