Okra, also know as lady finger and Bhindi can be cooked in different ways. Bhindi Masala is one of the most famous and delicious way to cook it.
Ingredients for Bhindi Masala
Okra ¾ kg chopped
Onion 1 large size chopped
Tomato 1 to 2 medium size chopped
Green chilies 2 to 3 finely chopped
Salt ¾ tsp
Red chili powder 1 ½ tsp
Turmeric powder ¼ tsp
Garam masala 1/8 tsp
Vegetable oil ½ cup
Water ¼ cup
Procedure
Take a big pot. Put it on a stove on medium heat add vegetable oil. When oil heat up then add onion in it and cook them until they become soft and light golden in color. As soon as they get color give them a splash of water like 1 tsp of water. Now add salt, red chili powder and turmeric powder. Mix them. The purpose behind splash of water is that we don’t want red chili to get burnt as soon as it hits the pot.
Now add tomato, green chilies and garam masala. Add remaining water to it. Mix them. Close the lid and let the tomatoes cook for 2 to 3 minutes. After that open the lid and break down the chunks of tomatoes with wooden spoon. Keep stirring, a stage comes when you can see that oil is start separating from mixture. At this stage start adding your okra. Stir them with light hand, be gentle to them. Turn the heat to low and let them cook for 15 minutes. Don’t stir too much otherwise they will break down but keep an eye on them. Okra (Bindi Masala) dish is ready and serve hot. Enjoy.
