It is a traditional dish. The best part of this dish is that it is very spicy and full of flavors. It goes well with pulao. The meat in this dish is so light and melts into your mouth. It hardly takes less than an hour to cook. It is simple and easy dish.
INGREDIENTS
Mutton stock
½ kg mutton
5 cups of water
¾ tbsp of salt
1 inch cinnamon stick
1 large black cardamom
6 to7 black peppercorns
4 to 5 cloves
1 tsp of cumin seeds
For curry
2 medium size onion, chopped
½ cup of vegetable oil
1 ½ tbsp of red chili powder
¼ tsp of turmeric powder (optional)
½ tbsp of salt
8 to 10 cloves of garlic
2 inch cube of ginger
3 green chilies
2 tsp of coriander seeds
2 medium size fresh tomato, chopped
½ tsp of garam masala

PROCEDURE
1) In a pressure cooker, add water in it. Add mutton, salt, cinnamon stick, black cardamom, black peppercorns, cloves, and cumin seeds. Close the lid and let them cook on medium heat. Every pressure cooker is different so use your pressure cooker according to its instruction. Mine takes about 10 minutes, once the piston moves.
2) Peel off ginger, green chilies and garlic and rinse them well. Ground or mince them in a mortar and pestle, also add coriander seeds. Ground them well. Texture should be roughly like a paste.
3) Once mutton is done and let it cool for 15 to 30 minutes, remove the lid. Your mutton and mutton stock is ready. In the same pressure cooker, on the medium heat add vegetable oil. Let it heat up.
4) Add chopped onions in the hot oil, let them cook until they turn golden brown in color. Add a splash of water and then add red chili powder, turmeric powder and salt. Add ginger and garlic paste in the pan and cook it until it gets fully cooked and all the bits turned golden in color. Keep on stirring until it starts separating from oil.
5) Add chopped tomatoes. Stir it well and Let tomatoes to fully cook. Keep an eye on them. After they softened try to break down a bit with the back of your spoon.
6) As tomatoes fully cooked the mixture will start separating from oil. At this stage add mutton and stir well. Cook them for about 5 minutes and add mutton stock in it. Add more amount of water in it if you need about 1 cup of water you can add. Close the lid and let the mixture comes to a boil. Once it comes to a boil let it simmer for about 5 minutes on low heat and serve.

How would I make this if I dont have a pressure cooker?
You can take a normal pot and put all these ingredients and boil it till the meat is soft and tender. It may take an hour(depends on meat). You can check the status of meat after every 15 to 20 minutes.
