Chicken Shawarma

Shawarma is an middle eastern spiced chicken wrap. Shawarma includes some chicken pieces, pickled vegetables and some tahini dressing. Traditionally it is made on a slowly-turning rotisserie. But at small level it is hard to make it that way. So simply grilling chicken on a grill pan works best. Try this recipe at home and we hope you will like it.

Ingredients

1 whole black cardamom
1 tsp cumin seeds
1 tsp whole coriander seeds
1/2 tsp whole black pepper
1/2 tsp garlic powder
3/4 tsp paprika powder
1 whole chicken breast
1/2 tsp salt
1 tbsp lemon juice
1 cup olive oil
1 medium size onion
1 medium size tomato
3 green chillies
3 tbsp vinegar
1/2 cup sesame seeds

Procedure

1. Take black cardamom, cumin seeds, whole coriander seeds and whole black pepper and dry roast all the spices. Open black cardamom and take out all the seeds. Dry roast on medium heat and roast until fragrant.

2. Add it into mortor and pestle, add garlic powder and paprika powder to the spices. Grind well. Make fine powder out of it.

3. Take chicken, cut it into half and remove all the bones. Make thin fillets and pound them well.

4. Add salt and rub it on both sides. In a deep dish, add ground spice mixture, lemon juice and olive oil. Mix well. Apply this mixture on each fillets. Place chicken in the same dish. Let it marinate for 2-3 hours.

5. Peel off onion, rinse onion, tomato and green chillies. Cut it into half and thinly slice onion, tomato and green chillies. Add white vinegar, mix well and set aside.

6. Tahini paste: Add sesame seeds on a dry skillet. Dry roast for 5 minutes or until fragrant on medium heat. Blend it well with some olive oil.

7. In a grill pan, add some olive oil, heat up oil then add chicken fillets to the pan. Cook for about 4 minutes on each side or until fully cooked. Once done take out and set aside.

8. Dressing: In a bowl add garlic mayonnaise and tahini paste. Mix well. Add some salted mayonnaise. Taste it and set aside.

9. Cut all the chicken pieces into bite size pieces. Take shawarma bread and warm up on a dry skillet. Apply some dressing, chicken, and pickled vegetables. Wrap it up on a butter paper and serve warm.
