Cabbage is a vegetable with a slight bitter in taste, but have a great crunch. A part from using it in coleslaw and burger it is a great vegetable to cook. It taste great with scrambled eggs so recipe is given below
INGREDIENTS
1 medium size onion, chopped
½ cup of vegetable oil
1 tbsp of red chili powder
¼ tsp of turmeric powder (optional)
1 tsp of salt
2 medium size fresh tomato, chopped
1/4 cup water
1 whole cabbage
4 eggs
Fresh coriander, chopped
PROCEDURE
1) Take your cabbage and chop it into small pieces. Rinse the pieces of cabbage and keep them in water.
2) In a heavy bottom pan add vegetable oil and preheat it on medium heat. Add chopped onions in it and cook them until they get lightly golden in color. Once they turn light golden in color, add a splash of water to prevent them from over cooking.
3) Add salt, red chili powder and turmeric powder. Stir it for 1 to 2 minutes.
4) Add chopped tomatoes and water. Stir and close the lid. Let tomatoes to fully cook. Keep an eye on them. After they softened try to break down a bit with the back of your spoon and stir it well.
5) As tomatoes fully cooked the mixture will start separating from oil. At this stage add your cabbage in it. Cook them for about 3 to 5 minutes with open lid. Cabbage will release some water so don’t add extra water.
6) Close the lid and let cabbage to fully cook. Let them simmer for about 10 minutes on medium heat but keep an eye on them. Once all the liquid dries out add eggs and mix well. Now you are ready to serve. Check the seasoning. Add chopped fresh coriander in it and serve warm with roti.
