Beef patties a.k.a chapli kebabs (Urdu: چپلي کباب) are simple, juicy and very easy to make. The best part of beef patties is the flavor of caramelized onion which goes very well with beef. During cooking patties, chunks of onion get caramelized, and become really sweet and flavorful. Second thing is use of whole coriander seeds, it makes a difference in the dish. If you don’t like whole coriander seeds you can ground them as you like.
Ingredients:
1/2 kg ground beef
1 medium sized onion, chopped
4 to 5 green chilies, chopped
1 tsp of salt
Juice of 3 very small size fresh lemons or ¼ cup of lemon juice
2 tsp of red chili powder
2 tsp of red chili flakes
1 tbsp of whole coriander
1 tsp of cumin seeds
Vegetable oil for cooking
Procedure:
Dry roast cumin seeds and whole coriander seeds on a dry skillet at medium heat, once smoke start coming out of it take them out on a plate and let them cool completely.
Take a big bowl and add ground beef in it. Add chopped onions, chopped green chilies, salt, red chili powder, red chili flakes and mix them well with your hands. Make sure that onion and spices are distributed evenly throughout the ground beef. Add cooled dry roasted cumin seeds and coriander seeds. At last add lemon juice and mix the beef very well. Divide the mixture into 10 to 12 equal parts. Make medium size patties or chapli kebabs and set aside.
Wash off your hands and prepare your grill pan or skillet. Pour some vegetable oil on grill pan or skillet. Cook each patty for 5 minutes on each side or 10 minutes in total. Serve with ketchup or use it as a burger patty.
