Aloo methi or methi aloo is a simple vegetarian dish. Aloo methi consists of potatoes, fenugreek leaves and spices. Aloo methi is a simple dish with very basic ingredients. Mostly made during winter season as fresh green fenugreek easily available during winter season. Serve with simple flat bread.
Ingredients
½ cup vegetable oil
1 tsp cumin seeds
2 medium sized onions, chopped
8-10 garlic cloves
1 inch ginger piece
2 green chili
1 tbsp. crushed coriander seeds
1 medium sized tomato, chopped
2 medium size potatoes, cut into cubes
¾ tbsp. salt
1 ½ tbsp. red chili powder
¼ tsp turmeric powder
¼ cup yogurt
3 cups fenugreek leaves and stems, chopped
Procedure
1. In a pan, add vegetable oil. Preheat oil on medium heat. Add cumin seeds and fry for a minute. Add chopped onions and fry on medium heat until get translucent or light golden in color.
2. Take ginger, garlic and green chili. Wash well. Add ginger, garlic, green chili and crushed coriander seeds in mortar and pestle. Make a paste and add it in fried onions. Fry for 2 minute.
3. Add chopped tomato and stir it well. Cook for about 3-5 minutes. Add potatoes and stir well. Add salt, red chili powder and turmeric powder. Mix well. Add yogurt and stir well. Add splash pf water and mix well.
4. Cook potatoes for 2-3 minutes. Add chopped fenugreek leaves and stems. Mix well. Cover the lid and cook on medium heat for about 20 minutes or until liquid dries out completely. Serve.
